Azienda Agricola “I Castagni” was founded by Mauro Garbolino in 2000 as a purebred Saanen and Alpine Chamoisee goat farm. Formerly a restaurant owner in Turin, the idea forthis new venture came to Mauro when he saw the windows of a cheese shop full of Italian and French cheeses. His desire to change lifestyle and return to the area where he was born led him to move to the Valli di Lanzo and start producing cheeses like his parents and aunts and uncles, also with the goal of promoting and preserving the high value of his birthplace. Mauro makes the cheeses with the assistance of his wife and although the dairy vaunts modern equipment, he uses the techniques learned from his parents and timehonoured processes gleaned from research carried outin
the area. The ageing room, with its distinctive vaulted ceiling, is a stone cellar formed by a natural cave, whose microclimate contributes to the sensorial characteristics of the cheese.
