Caseificio Quaranta and its two shops are located in the old town of Rivalta. The art of cheese-making has been handed down from father to son until the present day, and the dairy has gradually perfected new production technologies and products, while taking care to preserve the flavour of its artisanal wares. The milk that it uses comes from
local farms and carefully selected producers. The family-run dairy is managed by the grandchildren of its founder, Antonio Massa, who commenced production of “Tomino di Rivalta” in 1860. In 1906
Caseificio Quaranta’s tomino cheeses won a gold medal at the Genoa Trade Fair. The tradition is continued by Milena and Roberto, aided by their spouses, keeping the memory of the dairy’s 150-year history very much alive.
